Rodents eat a lot of things, some of which you probably wouldn't expect. Rats and mice are opportunistic hunters. They're both omnivores, which means they eat pretty much like humans do — a mixture of both plant based and animal based produce. Plant-based foods will include practically anything you could have in your kitchen — grains, especially the kids' breakfast cereal, vegetables and fruits, fresh or otherwise, nuts, seeds, and practically any other ‘edibles' that they encounter along the way. They will even chew and eat cardboard and other things that humans would not deem to be edible.

Hamsters are well known for hoarding foods — stashing large quantities of it in their cheeks and then hiding it away for future eating. Rats are the same, and other rodents too. If a really good source of food can be found, the rats will keep going back and forth, from the food to their food storage spot, stashing as much as they can get away with. Sadly, they don't eat everything before they move along, so any food that is left behind when the colony moves or gets killed off with rat traps (don't use poison) will sit there until it goes bad.
